- Provide 3 of large parsnips, peeled and diced.
- Use 3 stalks of celery, sliced.
- Get 1 of eating apple, peeled cored and diced.
- Provide 750 mls of chicken stock.
- Prepare of Salt and pepper.
- Use 1-3 tbsp of fresh lemon juice.

- Gently fry the celery in a tbsp of olive oil. After 5 minutes or so you can add a small amount of stock and turn the heat up a bit to help soften the celery slices (I often do this if I’m in a bit of a rush)..
- Add in your diced veg and then your stock, simmer for 30 minutes with the lid on..
- When the veg is tender, blend until smooth. Now taste the soup and season with salt and pepper and as much lemon juice as you like the taste of. I added about 2 tbsp so the soup had a bit of a zing but wasn’t overwhelming..
